A Taste of Resilience: How Angkor Chef is Redefining Cambodian Cuisine in San Jose

Channy Laux, a survivor of the Cambodian genocide under the Khmer Rouge, has a story of unimaginable hardship and triumph. From 1975 to 1979, she endured starvation, grueling labor, illness, and separation from her family. In 1979, she arrived as a refugee in Lincoln, Nebraska, where, despite language barriers and no formal schooling, she earned a Bachelor of Science from the University of Nebraska and a Master of Science in Applied Mathematics from Santa Clara University.

For 30 years, Channy thrived as an engineer in Silicon Valley’s aerospace and biotech industries. But her deep-rooted connection to Cambodian culture and cuisine never wavered. Inspired by her mother, who kept their family’s heritage alive through food, Channy turned family recipes into a business, founding Angkor Cambodian Food. The company’s award-winning Southeast Asian ingredients earned the prestigious SOFI Food Award.

In 2023, Channy brought her passion to life with Angkor Chef, a renowned Cambodian restaurant in downtown San Jose. More than just a dining spot, Angkor Chef is a space where stories of survival, resilience, and cultural pride are celebrated.

Bringing Cambodian food to a new audience wasn’t easy. With flavors unfamiliar to many, Channy hosted pop-ups, catered weddings, and shared meals in people’s homes. Today, Angkor Chef is a favorite among those seeking a taste of home and food enthusiasts eager to explore the bold, intricate flavors of Southeast Asia.

Signature dishes like Amok (steamed catfish curry wrapped in banana leaves), Somlaw Machu Kroeung (a tangy vegetable soup), and Angkor Noodles with Pork Belly reflect Cambodia’s rich culinary traditions.

Angkor Chef also serves as a cultural hub, where Channy plans to host events, showcase Cambodian artists, and unite people through food and tradition. When not in the kitchen, she draws inspiration from the diverse culinary offerings at San Pedro Square Market.

Her advice for aspiring entrepreneurs? “Never give up. Don’t listen to those who discourage you. If you’re passionate, success will follow.”
